1. Greek Yogurt and Fresh Fruit Cheesecake

A perfect evening snack that is tasty, refreshing, sweet, and irresistible.

Ingredients:

- Greek yogurt- 2 cups

- Low-fat cream cheese- 200 grams

- Granulated sugar- 50 grams

- Eggs- 3

- Cracker crumbs- 2 cups

- Vanilla essence- 2 tsp.

- Lemon juice- 1 tsp.

- Butter- 50 grams

- Chopped fruits of your choice

Pre-heat the oven to 350 degrees F. Take a medium-sized bowl and add melted sugar, butter and cracker crumbs and stir until it reaches an even consistency. Press this mixture into the bottom of a springform pan and flatten it with the help of a cup. Bake this mixture for about 8 minutes in the oven to create the crust of the cheesecake.

For cheesecake filling, add cream cheese to a bowl and beat it manually or with the help of an electric hand blender. Add greek yogurt, granulated sugar, lemon juice, and vanilla essence.

Continue beating until the ingredients blend completely. Now, add the eggs one at a time and continue beating until smooth.

Pour this filling on top of the now cool crust before baking it for about 40 minutes at 325 degrees F. Now, turn off the oven and let the cheesecake cool down before transferring it to the refrigerator for about 8 hours. Once done, you can then use fruits of your choice for the toppings.

2. Honey and Coconut milk Cream Cheese

Ingredients:

- Coconut milk yogurt- 2 cups

- Cream cheese- 200 grams

- Vanilla extract- 2 tsp.

- Honey- ½ cup

- Lemon juice- 1 tsp.

- Cornstarch- 1 tsp.

Pre-heat the oven to 350 degrees F and place a medium-sized pan with about 200 ml of water on the lower rack of the oven. Add cream cheese, vanilla extract, honey, lemon juice, and cornstarch to a bowl and beat all the ingredients until smooth. Place this mixture inside a springform pan and place the same on the middle rack of the oven above the water pan.

Bake for about 30 minutes. Once done, turn off the oven and let the cheesecake sit inside for another 10 minutes. Remove it and let it cool for about 20 minutes. Place the cheesecake in a refrigerator for about 6 hours before serving.

Preparing Cream Cheese at Home

When preparing cheesecake, you can experiment with a lot of ingredients to make sure that your child’s favorite dessert is healthy too. For instance, you can replace sugar with honey or stevia. Similarly, you can also make your own cream cheese rather than purchasing it from the market. Here are the ingredients and method.

Ingredients:

- Fortified milk- 1 liter

- Yogurt- 1 tbsp.

- Lemon juice- 1 tbsp.

Boil the milk and add lemon while stirring continuously to separate the cheese and whey. Turn off the heat and with the help of muslin cloth, drain the water. Wash this mixture with cold water at least 2 times to remove the lemony taste.

Add curd to this once the water is removed. Now, place this mixture in a blender jar and blend until smooth. Wrap this mixture in a muslin cloth again and let it hang for about 4-5 hours to remove the water. Collect the cream cheese from the muslin cloth into a bowl and store overnight. Your homemade cream cheese is ready.
